Fresh Homemade Salsa

1 small Fennel

2 Jalapeños

2 Red Hot Peppers

8 Tomatoes

2 Huge Handfuls of Parsley

5 Cloves of Garlic

Juice of 1 Lemon

Salt & Pepper to taste


Roast the fennel (sliced), and all hot peppers in the oven for 45 minutes at 350 F. Add the Roasted Veggies, Tomatoes, Parsley, Garlic, Lemon, Salt and Pepper to a food processor.

Top on eggs, bean and rice, burrito, or nachos!
